ANZAC slice is a take of the traditional ANZAC biscuit offering a sweet, chewy variety perfect for a family morning tea on ANZAC day or anyday.
Ingredients for the ANZAC slice
1 cup plain flour
1.5 cup rolled oats
2/3 cup raw caster sugar
2/3 cup coconut
125g butter
2 tablespoons golden syrup
1/2 teaspoon bicarb soda
2 tablespoons cold water
How to make it
Pre-heat a fan forced over to 160c
Greased and paper line a 18×28 slice pan
(to get the paper to sit well, crinkle it in a ball first and then when it unfold it will mould to the tray like magic)
Combine flour, oats. sugar and coconut
Melt the butter and mix with the syrup and water. you can use the microwave or stove top but keep an eye on it to make sure it doesn’t burn.
Stir in bicarb. It will go foamy which is fine, you are almost done!
The final step is to combine with the oat mixture and you are ready to pop it into the oven.
Press evenly into pan
Bake 25-30 min until golden. I think it takes mine 20-25 so keep an eye on it towards the end.
Cool in pan then cut and enjoy warm or cold.
