
Rainbow Cookies- Thanks to Olga
Simple and easy to make. Kiddies love to help with this one and they donโt last long in the household either.
Ingredients
1 cup Sugar
1 395g tin Sweetened Condensed Milk
1 teaspoon Vanilla Essence
250 grams Butter
2 Eggs
3 1/2 cups Self Raising Flour
1 large packet Smarties
Method
Preheat oven to 180OC.
Cream together butter, sugar and condensed milk.
Add vanilla and eggs and mix well.
Sift flour into large bowl.
Add wet ingredients to flour and mix well.
Cover and leave to stand for 20 minutes.
Roll large balls that fit the palm of your hand.
Place onto the baking sheet allowing plenty of room to spread (about 4 per tray).
Lightly dust rolling pin and roll over biscuits to flatten slightly.
Press plenty of smarties into each biscuit (keep them close together as they will move and spread out).
Bake for 10-15 mins or until they are golden in colour.
Cool for a few minutes before transferring to a wire rack to cool completely.
Note โ if the mixture appears too wet you may need to add a little extra flour

You’re going to need at least an extra cup of flour as the mixture is very sticky and wet – difficult to handle. They rise very well too so make sure they are super thin when you put them in the oven. I used M&Ms. I also used the same dough to make choc chip cookies aswell as jam drops. Thanks for sharing.
